Beef Barley Soup

Like I mentioned a couple times before… I wanted to start blogging some of my favourite recipes. Not because I think I am an awesome cook (because I AM NOT EVEN CLOSE!), but because it’s a good way to remember the one’s that worked out and tasted half decent! Like a “digital cook book” I guess. So here we are!

Alrighty… here’s one of my hubby’s favourite soups, or… favourite foods in general… BEEF BARLEY SOUP! A must-have for these dark, chilly fall days…

Things you’ll need:

- 2 lb. ground bison (or beef)
- 2 garlic gloves
- 10 beef bouillon cubes
- 8 cans of beef broth
- 8 cups of water
- 4 stalks of celery
- 1 large onion
- 2 full size carrots
- 1 cup of barley (regular not quick cooking))
- 2 tablespoons oil
- Seasoning salt

 

1. Chop up all the veggies first.

2. Cook the ground bison (or beef). Heat the oil in the pan. Once the oil is hot add the ground bison and garlic. Take out your seasoning salt and season the mean to your taste. Season the meat while it’s still raw… you want to cook in the juices and seasoning.

3. Add your chopped veggies. Start with the carrots, let them cook for a minute. Add the onion, and cook for a minute. Finally, add the celery and cook for another minute.

4. Add the water, beef broth and bouillon and stir all together. Turn the burner on medium high and cover. ALlow the mixture to boil for about 10 minutes and then reduce to a simmer. Allow the soup to simmer for about 45 minutes.

5. Add the barley, stir and simmer for another 45 minutes.

VOILA! And here you go… a giant pot of beef barley soup to feed you for at least 17 more lunches and dinners to come ;)
